How can I show|hide different columns in 'Manage Offerings' & 'Manage registrations' modal windows?

You would need to go to 'Course Offerings' list & modify /AvailableCourseOfferings.aspx view to add|remove columns from the view. Same applies to registrations, -you'll need to modify /CurrentRegistrations.aspx view in the 'Registrations' list.
